Though guar gum and acacia gum are often compared, they are not the same. Their properties are different. The difference between Guar Gum and Acacia Gum is that one comes from the seed of a pod-bearing plant and the other comes from the sap of the acacia tree. Acacia Gum comes from the dried sap of the acacia tree. The tree species has occasionally been called the ‘sacred tree’ because it is so important to so many different communities. Acacia Gum comes from the bark of the tree whereas Guar Gum is derived from the seeds of the plant with a similar name of guar sometimes referred to as the cluster bean plant. This plant is so old we don’t know exactly where it came from. It was traded as a commodity since the early 9th century A.D. 

Both of acacia gum (gum arabic) and guar gel (guar gum) are hydrocolloids used as film-forming, stabilizing and thickening agents in food. Acacia Gum (Gum Arabic) is primarily used in confectionery, pastries and baked goods; whereas guar gum (guar flour, guar meal and guar hydroxypropyltrimonium chloride) is primarily used in foods like sauces and salad dressings.

I prefer to use Acacia Gum in my recipes because it’s more soluble than Guar Gum. It is also more readily available than guar gum typically 2 to 1, during the winter months you wont find any guar gum at all. This means that you need to stock up on acacia gum especially if it is the only type of gum that you use in your recipes. While most people seem not to be affected by consuming acacia gum, there are some people who either don’t like the taste of it any way they use it or who are sensitive or intolerant to it.
